Easy Mussel Salad Avocado
INGREDIENTS:
2 lbs. mussels, cooked and shucked
4 T. chopped fresh parsley
1/2 cup diced red pepper
1/2 cup creamy Italian salad dressing
1/2 cup sliced celery
3 avocados, cut in half with pit removed
Salad greens


INSTRUCTIONS:
Mix and let marinate overnight. To serve scoop out half the avocado, then mound mussel salad in the avocado halves. Place on dressed salad greens.
