Mussels in Blue Cheese Sauce (Belgium)
INGREDIENTS:
2 T. butter
2 lbs. mussels
1 carrot, chopped
1 cup white wine
1 onion, chopped
4 oz. blue cheese, crumbled


INSTRUCTIONS:
sauté carrot and onion in butter in saucepan. Add mussels and wine and cook on medium heat until mussels open, shaking pan occasionally. Remove mussels to serving dish.

Add blue cheese to cooking broth. Stir over medium heat until cheese melts. Pour sauce over mussels and serve.
