Seafood Fra Diavolo (Italy)
INGREDIENTS:
2 T. olive oil
1 t. dried basil
2 garlic cloves, finely minced
1/4 t. hot red pepper flakes, crushed
1 onion, chopped
Salt & pepper to taste
4 cups crushed canned tomatoes
2 lbs. mussels
2 T. freshly chopped parsley
1 lb. shrimp, peeled and deveined
1/2 t oregano leaves, crushed
2 lbs. fresh linguine pasta


INSTRUCTIONS:
sauté garlic and onion in olive oil 2-3 minutes. Add crushed tomatoes, parsley, oregano, basil and hot pepper flakes. Stir well. Simmer for one hour covered. Add salt and pepper to taste. Add mussels and cover. When mussels start to open, add shrimp and continue to cook 5 minutes. Serve over hot linguine.
