Mussels a la Jane INGREDIENTS: 1/4 c. chopped onion 2 lbs. mussels 1 clove garlic, minced 3 T. cream (optional) 4 T. chopped red pepper Fresh chopped chives 1-2 T. olive oil 1/2 c. tomato pasta sauce 1/2 c. white wine 1 T. chopped fresh rosemary Black pepper INSTRUCTIONS: Briefly sauté onion, garlic and red pepper in olive oil. Add pasta sauce, white wine, rosemary and black pepper and simmer for 10 minutes. Add mussels and cook until they open (3-4 minutes). Just before serving, add cream and garnish with chopped chives.
