INGREDIENTS:
2 lbs. mussels, steamed & shucked
1/3 c. diced red onion
1/2 c. diced sweet red pepper
1/4 c. chopped cilantro
1/2 c. diced green pepper
3/4 c. olive oil
1 minced jalapeno pepper
1/4 c. fresh lime juice
1/3 c. chopped celery
Salt & pepper to taste
INSTRUCTIONS:
Thoroughly mix mussels with rest of ingredients and let marinate overnight. Makes two pounds of salad.
